- 2 cup baby Yukon gold potatoes halved
- 4 tbsp unsalted butter
- 4 cloves garlic minced
- Salt and pepper to taste
- 1 tbsp olive oil
- 1 tbsp dried thyme or rosemary optional
- Fresh parsley chopped for garnish
