Cuisine Italian
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup sun-dried tomatoes, chopped
- ½ cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- 8 ounces pasta of your choice
- Fresh basil for garnish
Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions. Drain and set aside.
Season and Cook Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Stir in heavy cream, sun-dried tomatoes, Parmesan cheese, and Italian seasoning. Let it simmer for 2-3 minutes until the sauce thickens slightly.
Combine Everything: Slice the cooked chicken and return it to the skillet. Add the cooked pasta and toss to coat everything in the creamy sauce. Cook for an additional 2-3 minutes to heat through.
Serve: Garnish with fresh basil and additional Parmesan cheese before serving.
