- Dough:
- 2 cup all-purpose flour
- ¾ cup boiling water
- ¼ cup cold water
- ½ tbsp salt
- Filling:
- 1 pound ground beef (preferably with some fat)
- ½ cup chicken broth or stock
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp grated ginger
- 1 tbsp minced green onions
- 1 tbsp sugar
- ½ tbsp salt
- ¼ tbsp white pepper
- 1 tbsp cornstarch
Make the Dough: In a mixing bowl, combine the flour and salt. Gradually add the boiling water while stirring to form a shaggy dough. Add the cold water and knead until smooth. Cover and let it rest for 30 minutes.
Prepare the Filling: In a bowl, mix together all the filling ingredients until well combined. Let it marinate in the refrigerator for at least 30 minutes.
Shape the Dumplings: Roll the rested dough into a log and cut it into small pieces. Roll each piece into a thin circle. Place a spoonful of filling in the center, gather the edges of the dough, and pleat to seal the dumpling tightly.
Steam the Dumplings: Line a steamer basket with parchment paper and arrange the dumplings in the basket, leaving space between them. Steam over boiling water for about 8-10 minutes.
