Ingredients

  • Dough:
  • 2 cup all-purpose flour
  • ¾ cup boiling water
  • ¼ cup cold water
  • ½ tbsp salt
  • Filling:
  • 1 pound ground beef (preferably with some fat)
  • ½ cup chicken broth or stock
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp grated ginger
  • 1 tbsp minced green onions
  • 1 tbsp sugar
  • ½ tbsp salt
  • ¼ tbsp white pepper
  • 1 tbsp cornstarch

Instructions

  • Make the Dough: In a mixing bowl, combine the flour and salt. Gradually add the boiling water while stirring to form a shaggy dough. Add the cold water and knead until smooth. Cover and let it rest for 30 minutes.
  • Prepare the Filling: In a bowl, mix together all the filling ingredients until well combined. Let it marinate in the refrigerator for at least 30 minutes.
  • Shape the Dumplings: Roll the rested dough into a log and cut it into small pieces. Roll each piece into a thin circle. Place a spoonful of filling in the center, gather the edges of the dough, and pleat to seal the dumpling tightly.
  • Steam the Dumplings: Line a steamer basket with parchment paper and arrange the dumplings in the basket, leaving space between them. Steam over boiling water for about 8-10 minutes.
  • Serve: Carefully remove the dumplings and serve them hot with a dipping sauce made of soy sauce and vinegar. Enjoy the burst of broth and delicious filling!
